Do you want to learn how to prepare homemade olive oil mantecados to surprise this Christmas? This time we bring you a recipe for this typical Spanish sweet in which we replace the classic pork butter with extra virgin olive oil. There can be no healthier choice! And easier, since as you will see in our recipe for homemade olive oil mantecados Its elaboration is not complicated at all.

The mixture with olive oil is kneaded quickly and to make them you will only need 4 basic ingredients, in addition to the decoration. You will require an oven and a cookie cutter, although you can also form these EVOO mantecados with your hands. It will be enough to make a ball and flatten! But now, we go with all the details in the recipe.

Homemade Olive Oil Mantecado Ingredients

  • 250 grams of flour 
  • 125 milliliters of Arbequina Extra Virgin Olive Oil
  • 50 milliliters of sweet anise
  • 100 grams of icing sugar
  • 1 teaspoon of cinnamon
  • The zest of half a lemon and half orange
  • Toasted sesame for decoration

How to make olive oil and almond oil?

  1. Distribute all the flour in a baking dish and place it in it for approximately half an hour, at 160º C and with heat up and down.
  2. Take the flour out of the oven and let it cool. The light roast that is obtained from this step, in addition to removing moisture, serves to give an unmistakable flavor to oil mantecados.
  3. Once cold, sift it into a large bowl and add the cinnamon and lemon and orange zest. Once mixed, add the sugar.
  4. Put the anise with the olive oil and see it gradually incorporate it into the bowl with the mixture.
  5. Continue mixing until a fairly compact paste is left. If you notice that you need more liquid, you can add a little more EVOO and anise.
  6. Once the dough is ready, form the small marzipan with your hands or run the roller through the dough and cut one centimeter thick pieces in the shape of your cookie pan.
  7. Place them on a tray with baking paper, well separated, as they will grow later.
  8. Add the toasted sesame on your olive oil marzipan.
  9. Bake! Bake for half an hour at 170º C with heat up and down and in the central part to make them well.
  10. Let them cool on a rack, sprinkle some icing sugar on them, and ready to eat!

What soft olive oil to choose for mantecados?

In all olive oil mantecado recipes you will find the suggestion to use a soft one. The recommended par excellence to make desserts -such as the famous Yogurt and olive oil cake– It is the Arbequina variety, which stands out for its great softness. Its fresh fruity smell with aromas of almonds and other fruits is perfect for this type of dessert.
