- 5 egg yolks
- 100 grams of sugar
- 250 milliliters of whole milk
- 250 milliliters of heavy cream
- 100 milliliters of Arbequina extra virgin olive oil by BelOleum
How to make Olive Oil ice cream: Steps
- Separate the egg yolks from the whites and beat them together with the sugar in a bowl until foamy.
- In a saucepan, heat the milk and cream until just about to boil.
- Remove the saucepan from the heat and slowly add the mixture to the beaten egg yolks and sugar, stirring constantly.
- Once combined, return everything to the saucepan over low heat (do not let it boil), stirring constantly until the mixture thickens.
- Once thickened, remove the mixture and let it cool to room temperature.
- Incorporate the olive oil until fully integrated.
- It’s time to chill our ice cream! If you don’t have an ice cream maker, pour your ice cream mixture into a sealed container and place it in the freezer. After an hour, remove the container and stir the mixture. Repeat this process every half hour for the next two hours to achieve a creamier, ice-free ice cream.
