Gourmet Christmas recipes to surprise at Christmas and New Year’s Eve

1. Beef tenderloin in red wine sauce with truffled potato purée and crispy almond as a main course

Beef tenderloin is a classic of the Christmas holidays and is used in thousands of recipes, it is true, but why not take advantage of this tasty meat to give it a gourmet and original touch?

Although sirloin is the undisputed protagonist of this Christmas menu, the potato, truffle and red wine sauce will be the culprits of having such a special flavor. You will also see that it is an easy recipe to prepare.

Keep in mind that we are going to give you the Approximate amounts for 4 people. If you are more, you will have to increase the proportion of each ingredient.

Sirloin Recipe Ingredients

  • 4 beef tenderloin
  • Beloleum Extra Virgin Olive Oil
  • 1 cup of red wine
  • 1 onion
  • 2 cloves of garlic
  • 1 carrot
  • 2 bay leaves
  • 4 large potatoes
  • 1/2 cup of milk
  • 2 tablespoons of butter
  • 1/2 cup sliced almonds
  • Truffle oil
  • Salt and pepper to taste

Prepare the meat:

  • The first thing you will have to do is season the meat with salt and pepper to taste.
  • Heat a little of our EVOO over medium-high heat in a large pan.
  • Cook the sirloins on both sides to the desired cooking point. We recommend that it be about 3 minutes on each side.

Create the sauce:

  • Finely chop the onion, garlic and carrot. In a saucepan, heat a little of our olive oil and fry until golden brown.
  • Add the red wine, bay leaves, and the amount you want of salt and pepper, and cook all simmer until the sauce reduces and thickens.

Make the puree:

  • Then, cook the potatoes already peeled and cut in salted water. When they are ready, drain them and reserve them.
  • Heat milk and butter in a pan and pot. Now add the potatoes, and beat everything to prepare your puree.
  • To give it truffled flavor, add salt, pepper and, of course, truffle oil to taste, mix all the ingredients well.

Decorate your Christmas dish with the final touch:

  • Finally, in a pan, you will have to toast the laminated almonds with a little of our olive oil and salt, until they are golden and crispy.
  • For the plating, place the meat on the puree, bathe it and serve with the red wine sauce and sprinkle the toasted almonds on top. And enjoy!

2. Easy recipe for monkfish stuffed with salmon and leek in puff pastry with pumpkin cream

If you are more of fish at Christmas, you will love this main course. Plus, nothing can go wrong when it comes to a puff pastry!

We recommend you combine it with a soft pumpkin cream, the perfect companion. Sometimes the garnishes are as important as the plate itself!

These are the ingredients you will need and the steps you should follow:

Ingredients Recipe monkfish

  • 4 monkfish fillets
  • 200 g of fresh salmon, cut into strips
  • 1 large leek
  • 1 sheet of puff pastry
  • Beloleum Extra Virgin Olive Oil
  • 500 g pumpkin
  • 2 cloves of garlic
  • 100 ml of cream
  • vegetable broth
  • Salt and pepper to taste

Step by Step Recipe Recipe

Prepare the filling:

  • Chop the leek very finely and sauté over medium heat in a pan.
  • Spread the monkfish fillets to fill them. Place a little leek on each one and a few strips of salmon.
  • Carefully roll each stuffed fillet.

Wrapping and baking:

  • Stretch the puff pastry sheet and cut it into strips wide enough to wrap each monkfish roll. Do it like this with all the rolls, making sure to seal the edges well.
  • Preheat oven to 200°C. Place your monkfish rolls on a baking sheet and bake for about 20 to 25 minutes, until the puff pastry is golden and crisp.

Make the pumpkin cream:

  • Meanwhile, peel the pumpkin and cut it into cubes, and finely chop the garlic.
  • In a pot, cook both the pumpkin and the garlic in a little vegetable broth, until they are soft.
  • You can now remove the pot from the fire. Crush the mixture, adding the cream until you get a smooth texture. Then, add salt and pepper to taste and, if you feel like it, add a splash of extra virgin olive oil to enhance its flavor.

PLANT:

Time to plate! Place a base of pumpkin cream on each plate and put the puff pastry roll on topBon appetite!

3. Seafood salad with lemon juice and dried tomato vinaigrette from starter

Our third option is somewhat lighter, perfect if you are looking for a refreshing starter for your special Christmas menu.

It is a seafood salad seasoned with a citrus vinaigrette. Can you think of a more original appetizer for these dates?

Ingredients Recipe Seafood Salad

  • 250 g prawns
  • 250 g of prawns
  • Mix of green leaves of your choice (rugula, spinach, lettuce…)
  • 1/4 cup fresh lemon juice
  • 2 tablespoons dried tomatoes
  • Beloleum Extra Virgin Olive Oil
  • Salt and pepper to taste

Step by step seafood salad

Prepare the seafood:

  • First of all, in a pan, sauté the prawns and prawns a little – previously peeled and cooked-. Add salt and pepper to taste.
  • When they are ready, remove them from the heat and let them cool to room temperature.

Make the vinaigrette:

  • To make the vinaigrette, mix the lemon juice with the chopped dried tomatoes in a small bowl.
  • Gradually add a little of our extra virgin olive oil while you mix it, to emulsify the vinaigrette. Finally, salt and pepper to taste, and reserve.

Create your salad:

  • In a large bowl, mix the cooked prawns and prawns with the mixture of green leaves.
  • Pour the vinaigrette over your salad and mix well until all the ingredients are impregnated.
  • To serve it, you can decorate it with a few slices of lemon or more dried tomatoes if you have left over. And you already have your perfect starter!
