How almond powders are made with olive oil
1. Toast the flour and almond
The first step of this recipe is to roast the flour and almond. You can put the two ingredients together on a tray for about 10 minutes in the oven at 180 degrees, but it is better to do it separately, leaving the wheat flour for a quarter of an hour and the almonds for about 10 minutes, which can be whole or already chopped.
2. Mix the flour with the almonds and the sugar
Place the almonds in a container and sift the flour and icing sugar. Then add the flour and mix well. Finally, add a pinch of salt. As an option, at this point you can add a few drops of anise, to bring your particular touch to the mantecados.
3. Add the oil
Pour the oil little by little while mixing. It is one of the parts of the most tricky recipe, since crumbs will be formed. The key is to do it little by little and add the oil you ask for. At a certain point, it is better to work the dough with your hands. Once you manage to unite and that there are no remains on the fingers, it will be ready.
4. Stretch the dough
After letting the dough rest for a few minutes, make a ball with it, and then roll it with a rolling pin on a floured surface. A sheet of approximately one centimeter or centimeter and a half thick should be left. To shape the mantecados, use a mold or even a glass. Put the cuts together, to take advantage of them, and thus get more units.
5. Bake the Polvorones
Place the powders on a baking tray and cook for 10-15 minutes at 200 degrees. You should be aware that they do not burn, since their taste will become bitter. To avoid this, pay attention to the roast of the edges, which will indicate that they can already be removed from the oven.
6. Let stand and put the powders in its packaging
Once baked, you should let them rest at room temperature until they cool down completely. You should be very careful, because the freshly made dough is very fragile, so it is advisable to use oven paper in your cooking, so that it serves as support later to transfer them outside. Finally, sprinkle icing sugar on top and insert each powder into your classic wrapper.
